Potato Soup


 2-3 tbs of butter

2-3 tbs of bacon grease(optional)

2-3 strips of bacon (optional)

1  medium sized yellow onion

1 cup of carrots chopped

1 cup of celery chopped

2 garlic cloves chopped or tsp of garlic paste

8 cups of  white potatoes

3-5 cups of chicken stock or more if needed

1 1/2 cups of whole milk

1 cup of cheddar cheese

3 tablespoons of fresh parsley chopped

Put first 5 ingredients into sauce pan and saute vegetables until onion is soft and clear. Add potatoes, chicken stock, salt and pepper and parsley and bring to a boil. Cover and simmer. 

Once potatoes are cooked take about 3-4 cups of potatoes out and set aside. Use immersion blender and blend so it looks creamy. Stir in the milk and potatoes that were taken out early. Garnish with cheese and bacon(optional) and more parsley
